Last Tuesday I was treated to something different, I was invited by my friends at Bacardi to attend an event that most people don't get to go to it was a little session for BARTENDERS ONLY, it took place at The Watershed at Darling Harbour.
I thought I would share this experience with you all.
So the little session was called the Bacardi Belief session. The invitation read:

"At this special event, you will have the opportunity to share in our passion and dedication, gaining a rare insight into our rum-making".
We were invited to learn about and drink "BACARDI TOGETHER".
When we (I took my girl Aviva with me) walked in the room it was filled with some of Sydney's top bartenders including:

We also got to smell and taste the BACARDI at every stage of production. WHOAH it was strong at some stages, but it also tasted like vanilla and caramel at other stages. After learning about this process you can understand why it is such a good rum.
Bacardi was created by a young spanish migrant named Don Facundo Bacardi Masso who saw something unique within a rough, harsh local spirit named "aguardiente" (fire water) and has spent most of his life perfecting it.
Bacardi has been in production since 1862 and is this year celebrating their 150th anniversary.
In production Bacardi Superior Rum goes through an extremely intense demineralisation, fermentation, filteration, aging, blending and bottling process.
Here are some other interesting facts:
- Bacardi is taste tested at every stage by humans during production and every bottle comes out tasting the same, I still do not understand how this happens. (Refer to the diagram below, where you see the BACARDI BAT is where they taste test it
- Bacardi has Black Strap Molasses and Charcoal in it but they are filtered to perfection
- A Bacardi Maestro is still considered an APPRENTICE at the age of 40
- The Bacardi Maestros are not allowed to travel together

I have honestly, never been a rum drinker, but let me tell you after this session my new favourite RUM is BACARDI. It is best served as a cocktail in a MOJITO, DAIQUIRI, or PINA COLADA or the traditional way - CUBA LIBRE - BACARDI & COKE or try it "Angel" style with Ginger Beer - "Dark & Stormy". Yum I just love it!
